Hervé Denis is a young 43-year-old wine grower situated in the Montlouis wine region of the Loire valley. His wines are produced from low yields of 35 hectolitres, and fermentation takes place in stainless or metal containers. Maturation takes place in vats buried in concrete. The wine is stored in cellars five meters below ground level, cut out from chalk.
In the vineyard Hervé has avoided all forms of artificial weed-killers for the last 13 years, and uses the growth of grass in the winter, which is ploughed back into the land in the springtime, giving back nutrition, and grass in the winter helps protect the soil from erosion. After many years, the wines may have a little sediment in the bottom of bottles but do not worry, there are no consequences to the quality and taste of the wines. It proves that the wines are authentic.
