Family Story :

All began with Pauline, the great-grandmother of Eric, who in 1860, sold her wine on the market places.

Then her son, Julien, with his wife Louise, took up the torch after Pauline, caring his vineyard and his wine in the same traditions, with love and respect.

Later came his son Leon, who by marrying Ginette, joined two areas, and created the Cellars of the Pauline.

It was in the 70s that the reputation of the wines of Sancerre in France and is growing even beyond our borders and settle with her the Cellars of Pauline, thanks to the work of Leon Louis.

Heir of all these traditions, today is Eric Louis that develops family wines with the same love and respect for the vines.

Diversity of the soil :

Our vines are planted on a soil made of 2 / 3 of clay-limestone and third floors of flint for Sancerre.

The clay and limestone soils are ideal to which the white Sauvignon derives its subtle complexity, while the Pinot prefers heavier land whose red and rosé keep a light fragrance.

Our area covers 18 acres around Thauvenay on the hills southeast of Sancerre.

From the wine to the glass :

All along the year, the wine is under constant observation. Over the seasons we will lavish the most appropriate care with respect for tradition.

In this spirit, we fight the most biologically available against diseases and parasites, are involved in the wine according to lunar rhythms and practice grassing of the vineyards in order to restore balance and structure to the ground.

After being carefully sorted, the grapes are pressed slowly in a horizontal press to extract the best fruit. The juice is then transferred into stainless steel tanks for fermentation in temperature controlled and gradual. White is high on the lees until February while red will age for 11 months in oak barrels from the region such as the forest of tree trunks, Bertrange, Nevers and Allier, to acquire all its structure.

Our cellars, situated in the village in front of the castle housing the stainless steel tanks in the first cellar, and our tasting room, ideal to enjoy the new vintage!
